Ingredients

  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup blackberries
  • 1/2 cup blackberry jam
  • 1 cup chocolate frosting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
  5. Stir in boiling water until well combined.
  6. Pour batter into prepared pans.
  7. Bake for 30-35 minutes. Cool in pans for 10 minutes, then remove from pans to cool completely.
  8. Spread blackberry jam between layers and frost the top and sides with chocolate frosting.
  9. Decorate with fresh blackberries.
