Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, cooked
  • 1 cup black beans, drained and rinsed
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tbsp chipotle in adobo, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine cherry tomatoes, corn, black beans, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, chipotle in adobo, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture.
  5. Pour the dressing over the pasta and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
