Description
A refreshing pasta salad with a zesty chipotle lime dressing.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, cooked
- 1 cup black beans, drained and rinsed
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tbsp olive oil
- 1 tbsp chipotle in adobo, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine cherry tomatoes, corn, black beans, red onion, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, chipotle in adobo, salt, and pepper.
- Add the cooled pasta to the vegetable mixture.
- Pour the dressing over the pasta and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust the amount of chipotle based on your spice preference.
- This salad can be made a day in advance for better flavor.
- Serve cold or at room temperature.
