Ingredients
- Bok Choy: 1 cup, chopped
- Carrots: 2, sliced thinly
- Mushrooms: 1 cup, sliced (shiitake or button)
- Snow Peas: 1 cup, trimmed
- Green Onions: 2, sliced
- Vegetable Broth: 4 cups
- Fresh Ginger: 1 inch, grated
- Garlic: 2 cloves, minced
- Soy Sauce: 2 tablespoons
- Sesame Oil: 1 tablespoon
Instructions
- Wash and prepare all fresh vegetables.
- In a large pot, heat vegetable broth over medium heat until simmering.
- Add sliced carrots, mushrooms, and bok choy stems to the pot and simmer for 5 minutes.
- Add bok choy leaves and snow peas, simmer for an additional 2-3 minutes.
- Stir in soy sauce, salt, and pepper to taste.
- Remove from heat and stir in sliced green onions before serving.
