Ingredients

  • Bok Choy: 1 cup, chopped
  • Carrots: 2, sliced thinly
  • Mushrooms: 1 cup, sliced (shiitake or button)
  • Snow Peas: 1 cup, trimmed
  • Green Onions: 2, sliced
  • Vegetable Broth: 4 cups
  • Fresh Ginger: 1 inch, grated
  • Garlic: 2 cloves, minced
  • Soy Sauce: 2 tablespoons
  • Sesame Oil: 1 tablespoon

Instructions

  1. Wash and prepare all fresh vegetables.
  2. In a large pot, heat vegetable broth over medium heat until simmering.
  3. Add sliced carrots, mushrooms, and bok choy stems to the pot and simmer for 5 minutes.
  4. Add bok choy leaves and snow peas, simmer for an additional 2-3 minutes.
  5. Stir in soy sauce, salt, and pepper to taste.
  6. Remove from heat and stir in sliced green onions before serving.
