Ingredients
- Vegetable broth: 4 cups (1 liter)
 - Bok choy: 2 cups, chopped
 - Shiitake mushrooms: 1 cup, sliced
 - Carrots: 1 cup, thinly sliced
 - Snow peas: 1 cup, trimmed
 - Fresh ginger: 1 tablespoon, grated
 - Garlic: 2 cloves, minced
 - Green onions: 3, sliced (white and green parts separated)
 - Soy sauce: 2 tablespoons
 - Sesame oil: 1 tablespoon
 - Salt and pepper: to taste
 
Instructions
- Gather your ingredients.
 - Prepare the vegetables by washing and chopping them.
 - Sauté the garlic and ginger in sesame oil until fragrant.
 - Add the broth and initial vegetables to the pot and simmer.
 - Stir in the remaining vegetables and continue to simmer.
 - Season the soup to taste with soy sauce, salt, and pepper.
 - Serve and enjoy, garnished with green onions.
