Ingredients

- 200g semolina
- 100g all-purpose flour
- 150g unsalted butter
- 100g sugar
- 2 egg yolks
- 50g ground almonds
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 180°C (350°F).
- Cream the butter and sugar until light and fluffy.
- Add egg yolks and vanilla extract, mix well.
- In another bowl, combine semolina, flour, ground almonds, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Shape the dough into small balls and place them on a baking tray lined with parchment paper.
- Bake for 15-20 minutes until golden brown.
- Let them cool before serving.
Notes
- Store cookies in an airtight container.
- These cookies can be made in advance for the celebrations.
- Adjust sugar to taste if you prefer less sweetness.
