Ingredients

Scale
  • 200g almond flour
  • 200g powdered sugar
  • 150g egg whites
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • Food coloring (red or gold)
  • 300g butter
  • 300g powdered sugar (for filling)
  • 1 tsp matcha powder (for green tea filling)
  • 1 tsp black sesame paste (for black sesame filling)

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. In a bowl, mix almond flour and powdered sugar.
  3. In another bowl, whip egg whites until soft peaks form.
  4. Gradually add granulated sugar while continuing to whip until stiff peaks form.
  5. Fold the almond mixture into the egg whites carefully.
  6. Add food coloring and mix gently.
  7. Pipe small circles onto a baking sheet.
  8. Let them sit for 30 minutes to form a skin.
  9. Bake for 15-20 minutes.
  10. Let them cool completely before filling.
  11. For the filling, beat butter and powdered sugar until smooth.
  12. Add flavorings (matcha or black sesame) and mix well.
  13. Pipe filling onto one macaron and top with another.

Notes

  • Make sure egg whites are at room temperature.
  • Use a kitchen scale for accurate measurements.
