Ingredients

  • 1 lb tomatillos, husked and rinsed
  • 2 green bell peppers, chopped
  • 1 jalapeño, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place tomatillos on a baking sheet and roast for 20 minutes.
  3. In a pot, sauté onion and garlic until translucent.
  4. Add green bell peppers and jalapeño, cooking for 5 minutes.
  5. Blend roasted tomatillos with vegetable broth until smooth.
  6. Pour the blended mixture into the pot with vegetables.
  7. Add cumin, oregano, salt, and pepper. Stir well.
  8. Simmer for 20 minutes, stirring occasionally.

Notes

  • Adjust spice level by adding more jalapeños.
  • Serve with tortilla chips or over rice.
