Description
A flavorful chili verde made with tomatillos and green chilies.
Ingredients

- 1 lb tomatillos, husked and rinsed
- 2 green bell peppers, chopped
- 1 jalapeño, chopped
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place tomatillos on a baking sheet and roast for 20 minutes.
- In a pot, sauté onion and garlic until translucent.
- Add green bell peppers and jalapeño, cooking for 5 minutes.
- Blend roasted tomatillos with vegetable broth until smooth.
- Pour the blended mixture into the pot with vegetables.
- Add cumin, oregano, salt, and pepper. Stir well.
- Simmer for 20 minutes, stirring occasionally.
Notes
- Adjust spice level by adding more jalapeños.
- Serve with tortilla chips or over rice.
