A healthy and flavorful wrap with chili lime chickpeas and cauliflower.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 small head of cauliflower, chopped
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon lime juice
- Salt to taste
- 4 large tortillas
- 1 cup lettuce, shredded
- 1/2 cup diced tomatoes
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss chickpeas and cauliflower with olive oil, chili powder, lime juice, and salt.
- Spread on a baking sheet and roast for 25 minutes.
- Warm tortillas in a pan or microwave.
- Fill each tortilla with roasted chickpeas, cauliflower, lettuce, tomatoes, and cilantro.
- Wrap tightly and serve.
Notes
- Adjust spice level by adding more or less chili powder.
- Can substitute tortillas with lettuce wraps for a lower carb option.
- Serve with avocado for added creaminess.
