Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 small head of cauliflower, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon lime juice
  • Salt to taste
  • 4 large tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chickpeas and cauliflower with olive oil, chili powder, lime juice, and salt.
  3. Spread on a baking sheet and roast for 25 minutes.
  4. Warm tortillas in a pan or microwave.
  5. Fill each tortilla with roasted chickpeas, cauliflower, lettuce, tomatoes, and cilantro.
  6. Wrap tightly and serve.

Notes

  • Adjust spice level by adding more or less chili powder.
  • Can substitute tortillas with lettuce wraps for a lower carb option.
