Ingredients

  • All-purpose flour: 1 ½ cups (190 g)
  • Unsweetened cocoa powder: ½ cup (50 g)
  • Baking soda: 1 teaspoon
  • Salt: ¼ teaspoon
  • Unsweetened chocolate: 4 oz (113 g), chopped
  • Butter: ½ cup (115 g), unsalted
  • Brown sugar: 1 cup (200 g), packed
  • Granulated sugar: ½ cup (100 g)
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • Chili powder: 1 teaspoon (adjust to taste)
  • Chocolate chips: 1 cup (175 g), semi-sweet or dark

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, and chili powder.
  3. In a microwave-safe bowl, melt the chopped unsweetened chocolate and butter together in 30-second intervals, stirring until smooth.
  4. In a large mixing bowl, combine the brown sugar and granulated sugar, then add the melted chocolate and butter mixture.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  7. Fold in the chocolate chips and drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes until the edges are set but the centers are still soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
