Description
A hearty dish combining polenta with chili and cheese.
Ingredients

- 1 cup polenta
- 4 cups water
- 1 cup shredded cheese
- 1 can chili beans
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
Instructions
- Boil water in a large pot.
- Add polenta and stir continuously for 5 minutes.
- Stir in salt, pepper, and olive oil.
- Cook for another 15 minutes until thickened.
- In a separate pan, sauté onions and bell peppers until soft.
- Add chili beans to the pan and heat through.
- Mix chili bean mixture into the polenta.
- Top with shredded cheese and let melt before serving.

- Use any cheese of your choice.
- Adjust spices according to taste.
- Serve with sour cream or avocado for added flavor.
