Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper.
  3. Cook chicken for 6-7 minutes on each side until cooked through.
  4. Remove chicken and set aside.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Add rice and stir to coat with oil.
  7. Pour in chicken broth and bring to a boil.
  8. Reduce heat, cover, and simmer for 15 minutes.
  9. Stir in parmesan cheese and return chicken to the skillet.
  10. Garnish with parsley and serve.
