A delicious chicken tortilla spinach casserole packed with flavor.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup spinach, chopped
- 1 cup tortillas, cut into strips
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine chicken, spinach, black beans, corn, salsa, cumin, and chili powder.
- In a greased baking dish, layer half of the tortilla strips.
- Add half of the chicken mixture on top of the tortillas.
- Sprinkle half of the cheese over the chicken mixture.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
Notes
- Serve with sour cream or avocado if desired.
- Can be made ahead and refrigerated before baking.
- Adjust spices according to your taste.
