A delicious chicken tortilla spinach casserole packed with flavor.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup spinach, chopped
  • 1 cup tortillas, cut into strips
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine chicken, spinach, black beans, corn, salsa, cumin, and chili powder.
  3. In a greased baking dish, layer half of the tortilla strips.
  4. Add half of the chicken mixture on top of the tortillas.
  5. Sprinkle half of the cheese over the chicken mixture.
  6. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  7. Bake for 25-30 minutes until cheese is melted and bubbly.

Notes

  • Serve with sour cream or avocado if desired.
  • Can be made ahead and refrigerated before baking.
