Ingredients

  • 1 pound cooked chicken, shredded
  • 4 bolillo rolls
  • 1 avocado, sliced
  • 1/2 cup refried beans
  • 1/2 cup mayonnaise
  • 1/4 cup salsa
  • 1/4 cup pickled jalapeños
  • 1/2 cup lettuce, shredded
  • 1/4 cup tomato, sliced

Instructions

  1. Preheat your grill or frying pan over medium heat.
  2. Spread refried beans on the inside of each bolillo roll.
  3. Melt mayonnaise with salsa and mix well.
  4. Layer shredded chicken on the bottom half of each roll.
  5. Add avocado, jalapeños, lettuce, and tomato on top of the chicken.
  6. Spread the mayonnaise mixture on the top half of the roll.
  7. Close the sandwiches and grill until golden brown.
  8. Slice in half and serve hot.
