- 1 pound chicken breast
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and minced garlic. Cook until softened.
- Add chicken breast, taco seasoning, and stir to coat.
- Pour in chicken broth, black beans, corn, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Shred the chicken in the soup and stir well.
- Serve hot with your favorite toppings.
