Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups tortilla chips, crushed
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the chicken, black beans, corn, salsa, and taco seasoning.
  3. Layer half of the crushed tortilla chips in a baking dish.
  4. Spread the chicken mixture over the chips.
  5. Add the remaining tortilla chips on top.
  6. Spread sour cream over the top.
  7. Sprinkle cheese and green onions on top.
  8. Bake for 25-30 minutes until cheese is melted and bubbly.

Notes

  • For a spicier dish, add jalapeños.
  • Use any cheese you prefer.
