- 4 large bell peppers
- 1 pound ground chicken
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat.
- Add ground chicken and cook until browned.
- Stir in cooked rice, diced tomatoes, garlic powder, onion powder, salt, and pepper.
- Fill each pepper with the chicken mixture.
- Top with shredded cheese.
- Place filled peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
- Let cool slightly before serving.
Notes
- You can use any color of bell peppers.
