Ingredients

  • 2 lbs chicken thighs, cut into pieces
  • 4 cups chicken broth
  • 2 cups carrots, chopped
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add chicken pieces and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic, sauté until soft.
  5. Add carrots and potatoes, stirring for a few minutes.
  6. Return chicken to the pot.
  7. Add chicken broth, thyme, rosemary, salt, and pepper.
  8. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  9. Check for seasoning and adjust if needed.
  10. Serve hot.

Notes

  • Can substitute chicken breasts for thighs.
  • Add more vegetables if desired.
