Ingredients

  • 1 whole chicken, cut into pieces
  • 8 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, combine the chicken and water.
  2. Bring to a boil over medium heat.
  3. Add carrots, celery, onion, garlic, salt, pepper, and bay leaves.
  4. Reduce heat and simmer for 1 hour.
  5. Remove chicken, shred the meat, and discard bones and skin.
  6. Add shredded chicken back to the pot.
  7. Stir in parsley and simmer for another 10 minutes.
  8. Serve hot.

Notes

  • You can add noodles for a heartier soup.
  • Store leftovers in the fridge for up to 3 days.
