Ingredients

- 1 whole chicken, cut into pieces
- 8 cups of water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large pot, combine the chicken and water.
- Bring to a boil over medium heat.
- Add carrots, celery, onion, garlic, salt, pepper, and bay leaves.
- Reduce heat and simmer for 1 hour.
- Remove chicken, shred the meat, and discard bones and skin.
- Add shredded chicken back to the pot.
- Stir in parsley and simmer for another 10 minutes.
- Serve hot.
Notes
- You can add noodles for a heartier soup.
- Store leftovers in the fridge for up to 3 days.
- This soup freezes well for future use.
