Delicious chicken scampi served with garlic parmesan rice.
Ingredients

- 2 boneless chicken breasts
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup white wine
- 1 teaspoon lemon juice
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 cup rice
- 2 cups water
- 1/2 cup grated parmesan cheese
- 2 tablespoons chopped parsley
Instructions
- Cook rice in water according to package instructions.
- In a skillet, melt butter over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add chicken breasts, season with salt and pepper, and cook until browned.
- Pour in chicken broth, white wine, lemon juice, and red pepper flakes.
- Simmer until chicken is cooked through.
- Stir in cooked rice and parmesan cheese.
- Garnish with chopped parsley and serve.
