- 1 lb chicken breast, cut into strips
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp vegetable oil
- 1 tsp garlic powder
- 1 tsp ground ginger
- 1/4 cup peanut butter
- 1/4 cup coconut milk
- 1 tbsp lime juice
- 1 tbsp soy sauce (for sauce)
- 1 tsp chili paste (optional)
Instructions
- In a bowl, mix soy sauce, brown sugar, vegetable oil, garlic powder, and ground ginger.
- Marinate chicken strips in the mixture for at least 30 minutes.
- Thread the marinated chicken onto skewers.
- Grill the chicken skewers over medium heat for about 5-7 minutes on each side until cooked through.
- In another bowl, whisk together peanut butter, coconut milk, lime juice, soy sauce, and chili paste until smooth.
- Serve chicken satay with peanut sauce for dipping.
Notes
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Adjust the spice level of the sauce to your preference.
- Serve with cucumber salad for a refreshing side.
