Ingredients

  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup broccoli, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the jasmine rice until water runs clear.
  2. In a pot, combine rice and chicken broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 18 minutes.
  4. While rice cooks, heat sesame oil in a skillet.
  5. Add garlic and ginger. Sauté for 2 minutes.
  6. Add chicken thighs, soy sauce, salt, and pepper. Cook until chicken is done.
  7. Add chopped broccoli and cook until tender.
  8. Fluff rice and serve with chicken and broccoli on top.

Notes

  • Adjust seasoning to taste.
  • You can substitute chicken with tofu for a vegetarian option.
