Ingredients

  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup frozen peas

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, garlic, carrots, and celery. Sauté until soft.
  3. Add diced chicken and cook until no longer pink.
  4. Sprinkle flour over the mixture and stir well.
  5. Pour in chicken broth, stirring constantly.
  6. Add potatoes, thyme, salt, and pepper. Bring to a boil.
  7. Reduce heat and simmer until potatoes are tender.
  8. Stir in cream and frozen peas. Cook for an additional 5 minutes.
  9. Serve hot.
