Ingredients
- Rice noodles: 200 grams (about 7 oz)
- Chicken breast: 300 grams (about 10.5 oz), thinly sliced
- Eggs: 2 large
- Bean sprouts: 100 grams (about 3.5 oz)
- Green onions: 4, chopped
- Peanuts: 50 grams (about 1.75 oz), crushed
- Lime: 1, cut into wedges
- Fish sauce: 3 tablespoons
- Tamarind paste: 2 tablespoons
- Garlic: 3 cloves, minced
- Chili powder: 1 teaspoon (adjust to taste)
- Vegetable oil: 2 tablespoons
- Sugar: 1 tablespoon (optional)
Instructions
- Soak the rice noodles in warm water for about 20-30 minutes, then drain and set aside.
- Marinate the sliced chicken breast with a pinch of salt and pepper for a few minutes.
- Heat 1 tablespoon of vegetable oil in a skillet, add the chicken, and cook for 5-7 minutes until browned. Remove and set aside.
- In the same skillet, add another tablespoon of oil, scramble the eggs, and push them to one side. Add minced garlic and sauté for 30 seconds.
- Add the soaked noodles and cooked chicken to the skillet. Pour in fish sauce, tamarind paste, and sugar, and toss everything together for 2-3 minutes.
- Stir in bean sprouts and chopped green onions, cooking for an additional 1-2 minutes until the vegetables are tender but crisp.
- Sprinkle chili powder over the dish, mix well, and serve topped with crushed peanuts and lime wedges.
