Ingredients

  • Rice noodles: 200 grams (about 7 oz)
  • Chicken breast: 300 grams (about 10.5 oz), thinly sliced
  • Eggs: 2 large
  • Bean sprouts: 100 grams (about 3.5 oz)
  • Green onions: 4, chopped
  • Peanuts: 50 grams (about 1.75 oz), crushed
  • Lime: 1, cut into wedges
  • Fish sauce: 3 tablespoons
  • Tamarind paste: 2 tablespoons
  • Garlic: 3 cloves, minced
  • Chili powder: 1 teaspoon (adjust to taste)
  • Vegetable oil: 2 tablespoons
  • Sugar: 1 tablespoon (optional)

Instructions

  1. Soak the rice noodles in warm water for about 20-30 minutes, then drain and set aside.
  2. Marinate the sliced chicken breast with a pinch of salt and pepper for a few minutes.
  3. Heat 1 tablespoon of vegetable oil in a skillet, add the chicken, and cook for 5-7 minutes until browned. Remove and set aside.
  4. In the same skillet, add another tablespoon of oil, scramble the eggs, and push them to one side. Add minced garlic and sauté for 30 seconds.
  5. Add the soaked noodles and cooked chicken to the skillet. Pour in fish sauce, tamarind paste, and sugar, and toss everything together for 2-3 minutes.
  6. Stir in bean sprouts and chopped green onions, cooking for an additional 1-2 minutes until the vegetables are tender but crisp.
  7. Sprinkle chili powder over the dish, mix well, and serve topped with crushed peanuts and lime wedges.
