Ingredients

- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- 1/4 cup unsweetened cocoa powder
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 tablespoon sugar
- Salt to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add chicken thighs and brown on both sides.
- Remove chicken and set aside.
- Add onion and garlic to the pot; sauté until soft.
- Stir in chili powder, cumin, cinnamon, and cocoa powder.
- Add diced tomatoes and chicken broth; mix well.
- Return chicken to the pot; cover and simmer for 30 minutes.
- Stir in sugar and salt; adjust seasoning if needed.
- Serve hot with rice or tortillas.
Notes
- Use dark chocolate for a richer flavor.
- Adjust spices to your heat preference.
- Let the mole sauce sit for a day for better flavor.
