- 1 pound chicken breast, diced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained
- 1 cup corn
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine cooked rice, chicken, bell pepper, onion, black beans, corn, salsa, cumin, and chili powder.
- Transfer the mixture to a greased baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes or until the chicken is cooked through and cheese is melted.
- Let it cool for a few minutes before serving.
