  • 1 cup coconut milk

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add chopped onion and sauté until golden.
  3. Add garlic and ginger, cook for 1 minute.
  4. Stir in curry powder, turmeric, and cumin.
  5. Add chicken pieces, cook until browned.
  6. Add diced tomatoes and cook until soft.
  7. Pour in coconut milk, bring to a simmer.
  8. Cover and cook for 20 minutes or until chicken is cooked through.
  9. Season with salt and garnish with cilantro.
