A refreshing chicken couscous salad packed with flavors.
Ingredients

- 1 cup couscous
- 2 cups chicken broth
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a pot, bring chicken broth to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork.
- In a large bowl, combine couscous, chicken, tomatoes, cucumber, onion, parsley, and feta.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or chill before serving.

- Can substitute chicken with chickpeas for a vegetarian option.
