A quick and healthy chicken and veggie stir fry packed with flavor.
Ingredients

- 1 lb chicken breast, sliced
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and ginger, sauté for 1 minute.
- Add sliced chicken, cook until browned.
- Add mixed vegetables, stir fry for 5-7 minutes.
- Pour in soy sauce, stir well, and cook for another 2 minutes.
- Season with salt and pepper.
- Serve hot.
