- 2 boneless chicken breasts
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 1 cup broccoli florets
- 1/4 cup feta cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes.
- In a bowl, toss sweet potatoes with olive oil, paprika, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 20 minutes.
- While sweet potatoes cook, season chicken breasts with salt and pepper.
- Heat a skillet over medium heat and cook chicken for 6-7 minutes on each side until cooked through.
- Add broccoli to the baking sheet with sweet potatoes and roast for an additional 10 minutes.
- Slice the cooked chicken and serve in bowls with sweet potatoes and broccoli.
- Top with feta cheese before serving.
