Description
A simple and delicious chicken and rice dish made in a crockpot.
Ingredients

- 4 boneless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup frozen mixed vegetables
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add rice, chicken broth, mixed vegetables, onion, garlic, salt, pepper, and paprika on top of the chicken.
- Stir to combine the ingredients.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Check that the chicken is cooked through and the rice is tender.
- Fluff the rice with a fork and serve warm.
Notes
- Use brown rice for a healthier option, but adjust the cooking time.
- Feel free to add spices according to your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
