Description

A simple and delicious chicken and rice dish made in a crockpot.


Ingredients

  • 4 boneless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add rice, chicken broth, mixed vegetables, onion, garlic, salt, pepper, and paprika on top of the chicken.
  3. Stir to combine the ingredients.
  4. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  5. Check that the chicken is cooked through and the rice is tender.
  6. Fluff the rice with a fork and serve warm.

Notes

  • Use brown rice for a healthier option, but adjust the cooking time.
  • Feel free to add spices according to your taste.
  • Leftovers can be stored in the refrigerator for up to 3 days.
