- Flour – 2 cups
- Baking powder – 1 tablespoon
- Milk – 1 cup
- Butter – 4 tablespoons (divided)
- Chicken broth – 4 cups
- Carrots – 2 medium, diced
- Celery – 2 stalks, diced
- Onion – 1 medium, chopped
- Salt – 1 teaspoon
- Pepper – 1/2 teaspoon
Instructions
- In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes.
- Pour in the chicken broth and bring to a gentle simmer. Add the shredded chicken, salt, and pepper. Stir well.
- In a mixing bowl, combine the flour, baking powder, and remaining salt. Add the milk and melted butter, stirring until just combined.
- Drop spoonfuls of the dumpling batter into the simmering broth, spacing them out evenly. Cover the pot and let cook for 15-20 minutes without lifting the lid.
