Chewy brownie ice cream sandwiches are a delightful treat combining rich brownies and creamy ice cream.

- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 pints of your favorite ice cream
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking pan.
- In a large bowl, mix melted butter and sugar until smooth.
- Add eggs and vanilla extract, and mix well.
- In another bowl, combine flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the brownie batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
- Let the brownies cool completely in the pan.
- Once cooled, cut brownies into squares.
- Place a scoop of ice cream on one brownie square, top with another square, and press gently.
- Repeat with remaining brownies and ice cream.
- Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
Notes
- Use different flavors of ice cream for variety.
- Store leftovers in the freezer.
- Let sandwiches sit for a few minutes at room temperature before serving for easier eating.
