- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 cup cherry pie filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of cupcake liners.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust in each cupcake liner.
- Bake for 18-20 minutes or until set.
- Let cool, then top with cherry pie filling.
Notes
- Store in the refrigerator.
- Best served chilled.
- Use fresh cherries for topping if desired.
