Description

A quick and easy cheesy taco pasta dish cooked in one skillet.


Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup corn (frozen or canned)
  • 1/2 cup sour cream

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Drain excess fat and add taco seasoning.
  3. Add diced tomatoes and beef broth to the skillet.
  4. Stir in elbow macaroni and bring to a boil.
  5. Reduce heat, cover, and simmer for 10-12 minutes until pasta is cooked.
  6. Stir in corn, sour cream, and cheese until melted.
  7. Serve hot.
