A quick and easy cheesy taco pasta dish cooked in one skillet.

- 8 oz elbow macaroni
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can diced tomatoes (14.5 oz)
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 cup corn (frozen or canned)
- 1/2 cup sour cream
Instructions
- Brown the ground beef in a skillet over medium heat.
- Drain excess fat and add taco seasoning.
- Add diced tomatoes and beef broth to the skillet.
- Stir in elbow macaroni and bring to a boil.
- Reduce heat, cover, and simmer for 10-12 minutes until pasta is cooked.
- Stir in corn, sour cream, and cheese until melted.
- Serve hot.
Notes
- For extra spice, add jalapeños.
- Use ground turkey for a lighter option.
- Top with fresh cilantro or green onions.
