Ingredients

  • Cheese tortellini: 500 g (fresh or frozen)
  • Fresh spinach: 200 g (washed and chopped)
  • Marinara sauce: 2 cups
  • Mozzarella cheese: 1 cup, shredded
  • Parmesan cheese: 1/2 cup, grated
  • Garlic: 3 cloves, minced
  • Olive oil: 2 tablespoons
  • Italian seasoning: 1 teaspoon
  • Salt and pepper: to taste

Instructions

  1. Cook the cheese tortellini in salted boiling water according to package instructions until al dente, then drain.
  2. In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1 minute.
  3. Add chopped spinach to the skillet and cook for 3-4 minutes until wilted. Season with salt, pepper, and Italian seasoning.
  4. In a mixing bowl, combine cooked tortellini, sautéed spinach, and marinara sauce. Mix well.
  5. In a greased baking dish, layer half of the tortellini mixture, sprinkle half of the mozzarella cheese, add the remaining tortellini mixture, and top with the rest of the mozzarella and Parmesan cheese.
  6. Cover with aluminum foil and bake in a preheated oven at 375°F (190°C) for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  7. Let cool for a few minutes before serving.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For freezing, wrap tightly in plastic wrap and aluminum foil; it can last up to 2 months.
