Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups potatoes, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix ground beef, spinach, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into meatballs.
  4. In a baking dish, layer half of the sliced potatoes at the bottom.
  5. Add half of the marinara sauce over the potatoes.
  6. Place the meatballs on top of the sauce.
  7. Layer the remaining potatoes over the meatballs.
  8. Pour the remaining marinara sauce on top.
  9. Sprinkle mozzarella cheese over the entire dish.
  10. Bake for 45 minutes or until the potatoes are tender and cheese is bubbly.
