Ingredients

  • 2 pounds baby potatoes
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1/2 cup sour cream
  • 1/4 cup olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, combine the olive oil, ranch dressing mix, garlic powder, onion powder, salt, and pepper.
  4. Add the potatoes to the bowl and toss to coat.
  5. Spread the potatoes on a baking sheet in a single layer.
  6. Bake for 25-30 minutes or until tender and golden.
  7. Remove from the oven and sprinkle with shredded cheddar cheese.
  8. Return to the oven for another 5 minutes until the cheese melts.
  9. Serve warm, garnished with chopped green onions.
