A delicious side dish of cheesy ranch potatoes.
Ingredients

- 2 pounds baby potatoes
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 1/2 cup sour cream
- 1/4 cup olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes in half.
- In a large bowl, combine the olive oil, ranch dressing mix, garlic powder, onion powder, salt, and pepper.
- Add the potatoes to the bowl and toss to coat.
- Spread the potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes or until tender and golden.
- Remove from the oven and sprinkle with shredded cheddar cheese.
- Return to the oven for another 5 minutes until the cheese melts.
- Serve warm, garnished with chopped green onions.
Notes
- Adjust the cheese according to your preference.
- Can use other types of cheese for variation.
- Store leftovers in the fridge for up to 3 days.
