- 2 pounds baby potatoes
- 1 cup cheddar cheese, shredded
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup milk
- 1 packet ranch seasoning mix
- 1/2 cup bacon bits
- 1/4 cup green onions, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the baby potatoes until tender, about 15-20 minutes.
- Drain the potatoes and place them in a large mixing bowl.
- Add cream cheese, sour cream, and milk to the potatoes.
- Mix in the ranch seasoning and half of the cheddar cheese.
- Fold in the bacon bits and green onions.
- Transfer the mixture to a baking dish.
- Top with the remaining cheddar cheese.
- Bake for 25-30 minutes until bubbly and golden.
Notes
- For extra flavor, use smoked bacon.
