Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups potatoes, diced
- 4 cups beef broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 2 tbsp butter
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the onion and garlic, cooking until softened.
- Stir in the diced potatoes and beef broth.
- Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in the milk, cheese, salt, pepper, and paprika.
- Cook until the cheese is melted and soup is heated through.
- Serve hot.
Notes
- Adjust seasoning to taste.
- For extra creaminess, add more cheese.
- Top with additional cheese or croutons if desired.
