Cheesy broccoli baked potatoes are a delicious and satisfying dish that combines baked potatoes with cheese and broccoli.

- 4 large russet potatoes
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and poke holes in the potatoes with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- While the potatoes bake, steam the broccoli until tender.
- In a bowl, mix the sour cream, milk, butter, salt, and pepper.
- Once the potatoes are done, cut them open and fluff the insides.
- Add the sour cream mixture, broccoli, and half of the cheese to the potatoes.
- Top with the remaining cheese.
- Return to the oven for 10 minutes until the cheese melts.
Notes
- You can substitute any cheese of your choice.
- For a lighter version, use Greek yogurt instead of sour cream.
- Feel free to add cooked bacon bits for extra flavor.
