  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth
  • 1/2 cup chopped fresh parsley
  • 1 cup diced mushrooms
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rice the cauliflower using a food processor.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onion, celery, and garlic. Sauté until softened.
  5. Stir in mushrooms and cook until browned.
  6. Add riced cauliflower, thyme, sage, salt, and pepper. Mix well.
  7. Pour in vegetable broth and cook until cauliflower is tender.
  8. Remove from heat and stir in parsley and walnuts.
  9. Transfer stuffing into a baking dish and bake for 20 minutes.
