A flavorful cauliflower stuffing recipe perfect for Thanksgiving.

			- 1 medium head of cauliflower, riced
- 1 cup diced onion
- 1 cup diced celery
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup vegetable broth
- 1/2 cup chopped fresh parsley
- 1 cup diced mushrooms
- 1/2 cup walnuts, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Rice the cauliflower using a food processor.
- In a large skillet, heat olive oil over medium heat.
- Add onion, celery, and garlic. Sauté until softened.
- Stir in mushrooms and cook until browned.
- Add riced cauliflower, thyme, sage, salt, and pepper. Mix well.
- Pour in vegetable broth and cook until cauliflower is tender.
- Remove from heat and stir in parsley and walnuts.
- Transfer stuffing into a baking dish and bake for 20 minutes.
