Description

A creamy cauliflower soup enriched with cheddar cheese and garlic.


Ingredients

  • 1 head of cauliflower, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add chopped cauliflower and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer until cauliflower is tender.
  5. Puree the soup using an immersion blender.
  6. Stir in cheddar cheese and heavy cream until melted.
  7. Season with salt and pepper.
  8. Serve hot.
