Description
A delicious and healthy take on grilled cheese using cauliflower.
Ingredients

- 1 medium head of cauliflower
- 2 cups shredded cheese (cheddar or mozzarella)
- 4 slices of bread
- 2 tablespoons butter
- Salt to taste
Instructions
- Preheat your grill or skillet over medium heat.
- Steam the cauliflower until tender, about 10 minutes.
- Let it cool slightly and then chop finely.
- In a bowl, mix the chopped cauliflower with shredded cheese and salt.
- Spread butter on one side of each slice of bread.
- Place a slice of bread butter-side down on the grill.
- Top with the cauliflower cheese mixture and another slice of bread, butter-side up.
- Grill until golden brown, about 3-4 minutes per side.
