A healthy and flavorful dish made with cauliflower rice and shrimp.
Ingredients

- 1 medium head cauliflower, grated into rice
- 1 cup shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add garlic and sauté until fragrant.
- Add shrimp and cook until pink.
- Add mixed vegetables and cook for 3-4 minutes.
- Stir in cauliflower rice and cook for 5-7 minutes.
- Create a well in the center and pour in beaten eggs.
- Scramble eggs until cooked, then mix with rice.
- Add soy sauce, sesame oil, salt, and pepper.
- Cook for another 2 minutes and serve hot.
Notes
- Use fresh or frozen shrimp.
- Adjust vegetables based on your preference.
- For added flavor, include green onions.
