A healthy alternative to traditional fried rice using cauliflower.
Ingredients

- 1 medium cauliflower, grated
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 green onions, chopped
- 2 tablespoons soy sauce
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Grate the cauliflower to make rice-sized pieces.
- Heat oil in a large pan over medium heat.
- Add garlic and mixed vegetables; sauté for 3-4 minutes.
- Push vegetables to the side and pour in beaten eggs; scramble until cooked.
- Add cauliflower rice, soy sauce, and green onions; mix well.
- Cook for another 5-7 minutes until cauliflower is tender.
- Season with salt and pepper; serve hot.
Notes
- Use fresh cauliflower for best results.
- Adjust soy sauce according to taste.
- Add protein like chicken or shrimp for a complete meal.
