Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 8 ounces cream cheese
  • 1/4 cup unsalted butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 15×10 inch jelly roll pan and line with parchment paper.
  3. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat eggs and sugar until thick.
  5. Stir in flour mixture, carrots, and walnuts gently.
  6. Spread the batter evenly in the pan.
  7. Bake for 15 minutes or until a toothpick comes out clean.
  8. Remove from oven and let cool slightly.
  9. Roll the cake with the parchment paper into a log and let cool completely.
  10. In a bowl, beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  11. Unroll the cake, spread the frosting, and re-roll.
  12. Chill before slicing and serving.
