  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 15×10-inch jelly roll pan and line it with parchment paper.
  3. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, beat eggs and sugar until light and fluffy.
  5. Add oil, grated carrots, and vanilla to the egg mixture. Mix well.
  6. Gradually add the dry ingredients to the wet ingredients. Stir until combined.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 13-15 minutes or until a toothpick comes out clean.
  9. Once baked, remove from the oven and let it cool for a few minutes.
  10. Invert the cake onto a clean kitchen towel dusted with powdered sugar.
  11. Roll the cake with the towel and let it cool completely.
  12. For the filling, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
  13. Unroll the cooled cake and spread the cream cheese filling evenly.
  14. Roll the cake back up without the towel. Refrigerate for at least 1 hour before slicing.
