- 8 ounces cream cheese, softened

- 2 cups powdered sugar

Instructions
- Preheat oven to 375°F (190°C).
- Combine flour, baking powder, baking soda, cinnamon, and salt in a bowl.
- In another bowl, beat eggs and sugar until thick.
- Add carrots, pineapple, and vanilla to the egg mixture.
- Gradually mix in the dry ingredients.
- Spread the batter evenly on a parchment-lined baking sheet.
- Bake for 12-15 minutes or until golden.
- Remove from oven and roll the cake in a clean kitchen towel.
- Let it cool completely.
- Beat cream cheese and butter together.
- Add powdered sugar and vanilla, mix until smooth.
- Unroll the cake, spread frosting, and roll it back up.
- Chill for 1 hour before slicing.
