Ingredients

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine oil, brown sugar, granulated sugar, eggs, and vanilla.
  4. Mix the dry ingredients into the wet ingredients.
  5. Fold in carrots, pineapple, and walnuts.
  6. Fill cupcake liners with batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool completely before frosting.
