- 2 cups grated carrots
- 1 cup sugar
- 1 cup flour
- 1/2 cup vegetable oil
- 4 eggs

- 8 oz cream cheese
- 1/2 cup powdered sugar
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix grated carrots, sugar, flour, vegetable oil, eggs, vanilla extract, baking powder, cinnamon, and salt.
- Pour the mixture into a greased cake pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- In another bowl, beat cream cheese and powdered sugar until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Once the cake has cooled, spread the cheesecake mixture on top.
- Chill for at least 2 hours before serving.
