Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix grated carrots, sugar, flour, vegetable oil, eggs, vanilla extract, baking powder, cinnamon, and salt.
  3. Pour the mixture into a greased cake pan.
  4. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. In another bowl, beat cream cheese and powdered sugar until smooth.
  6. In a separate bowl, whip the heavy cream until stiff peaks form.
  7. Fold the whipped cream into the cream cheese mixture.
  8. Once the cake has cooled, spread the cheesecake mixture on top.
  9. Chill for at least 2 hours before serving.
